This refreshing treat was created by our good friend James from Seattle. He comes to Kona every year with his extended family. While on vacation, he demonstrates his culinary prowess by whipping up a batch of different ice creams every day using Big Island Bees honey. His motto is “Peace, Love and Ice Cream.”

Ingredients:

MANGO SORBET

  • 4 cups of cubed ripe mangos
  • 1 cup simple syrup made with Big Island Bees Chili Pepper Honey
  • 1/4 cup freshly squeezed lime juice

Follow this honey simple syrup recipe and use chili pepper honey for the honey with a 2.25:1 ratio of honey to water (one 9 oz jar of honey per 1/2 cup of water).

CHILI HONEY SAUCE

  • 2 Tablespoons chili simple syrup (left over from the simple syrup made for the sorbet)
  • 2 tablespoons freshly squeezed lime juice
  • 4 Tablespoons finely ground chili powder (Mexican Hatch Chili Powder is a good choice)

Directions:

  1. Puree mango in a food processor and stir together in a separate bowl with the lime juice and one cup of the simple syrup. Press this through a fine sieve.
  2. Freeze in ice cream maker according to directions for your machine.
  3. Make the sauce: Stir ingredients together and adjust for desired taste.
  4. Pour as much sauce as you like on top of a scoop of the Mango Sorbet for added spiciness!

MANGO SORBET

The mango sorbet is the star of this recipe, bringing the sweet and tangy flavors of ripe mangos to the forefront. To make the sorbet, you will need 4 cups of cubed ripe mangos. It’s important to use mangos that are at their peak of ripeness for maximum flavor.

In addition to the mango, you will need 1 cup of simple syrup made with Big Island Bees Chili Pepper Honey. This unique honey adds a touch of heat and sweetness to the sorbet, elevating the flavors to a whole new level. Don’t forget to follow the honey simple syrup recipe mentioned earlier, using a 2.25:1 ratio of honey to water.

To balance out the sweetness, add 1/4 cup of freshly squeezed lime juice to the mango mixture. The tanginess of the lime juice will help to enhance the tropical flavors of the sorbet.

Once you have all the ingredients ready, puree the mango in a food processor until smooth. Transfer the puree to a separate bowl and stir in the lime juice and one cup of the chili pepper honey simple syrup. For a smooth texture, it’s recommended to press the mixture through a fine sieve to remove any lumps or fibers.

The next step is to freeze the mango mixture in an ice cream maker according to the instructions for your specific machine. This will ensure that the sorbet has a creamy and smooth texture.

CHILI HONEY SAUCE

To add an extra kick to the spicy mango sorbet, we have a delicious chili honey sauce. This sauce is made from the leftover chili simple syrup, freshly squeezed lime juice, and finely ground chili powder.

Start by combining 2 tablespoons of the chili simple syrup (left over from making the sorbet) with 2 tablespoons of freshly squeezed lime juice. Mix these ingredients together until well combined.

Next, add 4 tablespoons of finely ground chili powder to the mixture. Mexican Hatch Chili Powder is recommended for its rich and smoky flavor. However, feel free to use any chili powder of your preference.

Stir all the ingredients together until the sauce is well blended. Adjust the amount of chili powder based on your desired level of spiciness. You can always add more if you prefer a hotter sauce or reduce the amount if you prefer a milder flavor.
