Spring Equinox Salad

Day and night are equally balanced on the equinox, marking the beginning of spring. The days will start to lengthen and get warmer. Here in Hawaii, changes in seasons are subtle but remarkable. The purple jacaranda trees shed their blossoms along the roadsides, and the bright red Lehua blooms sparkle against the forest canopy. Spring is a time for a fresh start. It is a time when we can make changes and seek balance within our lives. Let’s celebrate the beginning of spring by enjoying a bounty of fresh-picked greens. I made this salad with fresh local vegetables and a sprinkling of edible flowers.

Ingredients:

For the Salad:

  • 3 cups mixed local greens (I used baby romaine and pea sprouts)
  • A handful of edible flowers
  • Optional: for a heartier salad add in 1 cup of chopped vegetables you have on hand

Zesty Lemon Honey Vinaigrette (Yield: 1/2 cup)

  • 1 Tablespoon of Macadamia Blossom honey
  • 1 Tablespoon of Fresh squeezed lemon juice
  • 1 teaspoon of grated organic lemon peel
  • 1/4 cup of Extra-Virgin Olive Oil
  • Kosher salt and pepper to taste

Honey Balsamic Dressing (Yield: 1 1/4 cup)

  • 2 Tablespoons Organic Wilelaiki honey
  • 1 Tablespoon Dijon mustard
  • One large clove of garlic, minced
  • 1/4 cup of a quality balsamic vinegar
  • 2/3 cup of extra virgin olive oil
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper

Miso Honey Dressing (Yield: 1 1/2 cups)

  • 1/4 cup soy sauce
  • 1/4 cup white miso
  • 1/2 cup fresh lemon juice
  • 1/4 cup rice wine vinegar
  • 1.5 Tablespoons of freshly minced garlic
  • 1.5 Tablespoons of freshly grated ginger
  • 1 Tablespoon of chili crisp or red chili paste
  • 2 Tablespoons of Organic Lehua honey
  • 2 tablespoons of toasted sesame oil
  • 1/4 cup of extra virgin olive oil

Zesty Lemon Honey Vinaigrette

To make the Zesty Lemon Honey Vinaigrette, whisk together the Macadamia Blossom honey, fresh squeezed lemon juice, grated organic lemon peel, extra-virgin olive oil, and a pinch of salt and pepper in a small bowl. Slowly drizzle and whisk in the olive oil until well combined. This vinaigrette adds a bright and tangy flavor to the salad, balancing out the earthiness of the greens.

Honey Balsamic Dressing

The Honey Balsamic Dressing offers a more robust and sweet flavor profile. In a small bowl, whisk together the Wilelaiki honey, Dijon mustard, minced garlic, balsamic vinegar, sea salt, and freshly ground black pepper until well combined. Slowly add the extra virgin olive oil while continuing to whisk, until the dressing has emulsified. Store this dressing in the refrigerator for several months, and make sure to shake well before serving.

Miso Honey Dressing

For a unique and savory twist, try the Miso Honey Dressing. Place the soy sauce, white miso, fresh lemon juice, rice wine vinegar, minced garlic, grated ginger, chili crisp or red chili paste, Organic Lehua honey, toasted sesame oil, and extra virgin olive oil in a blender or small food processor. Blend on low speed until the dressing is smooth and well mixed. The combination of miso, honey, and sesame oil creates a rich and flavorful dressing that pairs perfectly with the fresh greens.

In addition to the salad dressings, don’t forget to prepare the salad itself. In a large bowl, combine the mixed local greens and a handful of edible flowers. You can also add in any other chopped vegetables you have on hand to make the salad heartier. Toss the salad with your desired dressing and serve as a refreshing and vibrant dish for any spring occasion.

Celebrate the beginning of spring by enjoying the bounty of fresh-picked greens and indulging in the variety of flavors offered by the three distinct honey-based dressings. These dressings add a touch of sweetness and complexity to your salad, elevating it from a simple side dish to a delicious and satisfying meal. Whether you choose the tangy Zesty Lemon Honey Vinaigrette, the robust Honey Balsamic Dressing, or the savory Miso Honey Dressing, your taste buds will thank you for the explosion of flavors.
